Score context

Re in South Eveleigh was Sydney's zero-waste lab: pineapple-leaf banquettes, milk-bottle terrazzo, and drinks built from market surplus (Wholebeast with chicken-feet caramel). Drinkers loved the fun more than the manifesto. It shut in February 2024; the guest read is past tense now.

Themes in this historical read

What guests like

  • Zero-waste program that actually tasted good — chicken-feet caramel and banana-skin ferments, not a lecture.
  • Matt Whiley and Maurice Terzini built a slick Eveleigh room, not a recycling bin with a shaker.
  • French Martini, Wholebeast, and the 10x10 pantry drinks were the orders people remembered.
  • Time Out's Best Innovation winner; drinkers felt clever without being preached at.

What to know

  • South Eveleigh location was a trek; post-Covid traffic never quite filled it.
  • Closed February 2024 — you cannot go anymore.
  • Some found the waste-as-ingredient conceit more interesting than delicious.
